uhhh, I mean happy turkey day. I always go to my mom’s for thanksgiving and since we are all veggies, she makes green chile enchiladas instead of turkey. And I must say, the enchiladas are a great feast for the holidays – enchiladas, stuffing, cranberries, fruit salad. Yummm! And don’t take my word for it, Cheryl always bugs me to bring her leftovers.

yeah, I ate them the same day I got back – did not want them to go to waste!
btw – I was wrong about the type of enchiladas. It was spinach enchiladas.
